At first glance I was taken back by the 8” Ergo Chef’s

I have had the knives for close to a year now. They are by

enrolled at Le Cordon Bleu, Las Vegas, and I just wanted to say

I was introduced to the Ergo Chef cutlery while hosting culinary
classes at a kitchen retailer. Upon inspection the quality,
materials and workmanship were comparable to Henckels and Wusthof.
But, if you are already using the best steel, how much can a
knife really be improved on?
Well, this is where the unique design of the 8” Ergo Chef knife
came into play. Upon chopping my first onion, I noticed the
difference. The angle of the butt in relation to the blade make
chopping more comfortable because there is less motion needed to
make the knife meet the cutting board. The angle seems to
increase the pressure of the motion without the use of extra
force.
The knife is “my favorite in the rack.” I purchased extras to
outfit my kitchen staff. It’s now the only brand my staff wants

Just wanted to drop you a line and mention that this is the
nicest chef's knife my wife or I have ever seen. For example, I
have my old Mundial sitting two slots down from the Ergo Chef...
it rarely comes out of the block any more since we got your
knife. It's great, my wife loves the natural rocking motion it
encourages, and I love the abbreviated bolster for steeling and
sharpening. The one thing that upsets me about other chef knives
is the bolster -- I have to grind that thing down with my bench
grinder after a few years so that it sharpens properly. Your
knife was truly an outrageously good purchase, and I hope you
sell a zillion of them. |

I own a catering business and work a full time job with another
caterer, so many weeks I work far more than forty hours and my
wrists have been giving me trouble for the past few months and
sometimes I can barely cut through a carrot by the end of a long
day. Recently my doctor has diagnosed me with carpal tunnel
syndrome. I had purchased your 8" Chefs’ knife on a whim from
Lou at Knife Pro here in Massachusetts. My wrists have felt so
